A steamed bread from the Kullu valley, and the one stall in Manali that still makes it the slow way.
Siddu is a wheat bread, leavened overnight, stuffed with a paste of walnuts or poppy seed and steamed. It is eaten with ghee and a green chutney, and it is the thing people from Kullu miss most when they leave.
In the old market at Manali one stall still makes it the slow way, with dough set the night before. By eleven it is sold out.
