The bakeries of the lower bazaar
Shimla's old bakeries still bake bread in the same ovens, for a town that has changed around them.
The lower bazaar in Shimla is a steep lane of shops below the Mall, and on it are a handful of bakeries that have been baking for more than a hundred years.
They began by supplying the summer government. Today their customers are students, office workers and families who buy a loaf on the way home.
The ovens are fired before dawn. The bakers make bread, rusks and a plain sponge cake that some families have bought every Sunday for three generations.
The bakers say the hardest thing now is finding young people who want to work through the night.
